Wilderness Cooking with Bonnie McTaggart and Jill Bryant

We show how to cook Moroccan couscous for camping, with advice given for more general wilderness cooking with different recipes and for the techniques demonstrated in this recipe.

Bonnie McTaggart, a retired registered nurse, is mother to two children and grandmother to two granddaughters. A nature enthusiast, Bonnie enjoys many outdoor sports, namely cross country skiing and snowshoeing in the winter and paddling and golf in the summer. She does more kayaking now but always looks forward to the annual canoe trip with her daughter Jill and family.
Her first canoe trip in the 1970s led her to try to improve the nutrition and quality of camp food. These recipes were tried out on many camping trips and evolved over a few years of research with lots of suggestions and input from fellow campers. The cookbook, written with her daughter, features recipes that are tasty, nutritious, and hearty. Napanee is Bonnie’s home now and she lives on a river where she can kayak on a regular basis. Bonnie is fortunate to have remained strong and healthy and is still able to enjoy these wonderful outdoor activities.

Jill Bryant is a Canadian writer, editor, and publishing professional, living in Kingston. Jill grew up in scenic Elora and Eden Mills. She is the co-author of The Wilderness Cookbook: A Guide to Good Food on the Trail (Second Story Press) and Making Shadow Puppets (Kids Can Press); and author of Phenomenal Female Entrepreneurs, Dazzling Women Designers, Amazing Women Athletes (Second Story Press), Backyard Circus (Annick Press), and others. She is currently exploring writing early middle-grade fiction.
As a freelance project manager for the Educational Outreach department at Perimeter Institute for Theoretical Physics in Waterloo, Jill oversees the development of science resources. She is a member of CANSCAIP, The Canadian Children’s Book Centre, IBBY Canada, and The Writers’ Union of Canada and writes book reviews for Quill & Quire.
She and her husband, Daryn, enjoy the outdoors and great food, and have shared this love with their two young-adult daughters. Swimming, canoeing, cross-country skiing, and yoga are among her favourite recreational activities. Every summer she goes on a memorable family wilderness canoe trip with three generations of women.
