Lev has been cooking professionally for 10 years and owns the popular Toronto restaurant, Lox + Schmear, where they specialize in small batched fish smoking. Their pickled red onions are a fan favourite and can be found on many of their delicious bagels, complete with lox and cream cheese. Over the years, Lev has played around with various pickling recipes and wants to share their love for the pickle by teaching folks the basics and sending them off with a taste for sweetness.
